If you have refrigeration, you're already one of the lucky ones. But, if you have a cold plate system rather than an evaporator, you may have a problem keeping things frozen. Cold plates are often mounted in such a way (vertically or on a slant) that it's difficult to keep meats, ice cube trays, etc. actually touching the plate.

You may want to consider mounting a large plastic container such as a Tupperware or Rubbermaid bin. Cut out an access opening in the bottom or side of the bin that is large enough to allow ease in stowage & removal of the contents. Fit it around the cold plate so that it creates a space between the bin and the plate. Properly placed, you can now use all of the surface area of the cold plate (top, bottom, sides, front) to keep your foods frozen. You may be able to just use screws to attach it to the interior of your cold box, but see what will work best for you.

An added benefit of this plastic bin is that it acts as a separator to prevent accidental freezing of your more delicate vegetables and other items.
